Orange Cranberry Granola

Ingredients
  • 1.5 cups rolled oats
  • 1.5 cups crisped rice cereal, or sub an additional 1.5 cups rolled oats
  • ¼ cup ground flaxseed
  • 1 cup chopped almonds
  • zest of 1 large orange, about 1 tablespoon
  • juice of 1 large or 2 small oranges, about ⅓ cup
  • ⅓ cup honey or sub maple syrup
  • ⅛ teaspoon salt
  • 1 tablespoon vanilla
  • 1 teaspoon cinnamon
  • 2 tablespoons coconut oil
  • ½ cup dried cranberries, chopped if large.
Instructions
  1. Heat oven to 325 degrees fahrenheit and line a large rimmed baking sheet with parchment paper.
  2. In a large mixing bowl, add oats, rice cereal, flaxseed and almonds and toss to combine.
  3. In a small saucepan, heat the orange zest, juice, honey, salt, vanilla, cinnamon and coconut oil over low heat until warmed and whisk to combine.
  4. Pour honey mixture into oats mixture and mix well so everything is evenly coated.
  5. Pour onto baking sheet and bake for 30 minutes, removing from oven and stirring at the half way point.
  6. Remove from oven and let sit, without stirring, until completely cooled. This helps to form clusters. Once it's completely cooled, sprinkle with cranberries and mix to combine.
  7. Store in an airtight container for up to 3 weeks.
