Spinach and Walnut Pesto

A fresh and easy pesto recipe so you don't have to wait for that summer basil
Ingredients
  • ½ cup walnuts
  • 2 cups baby spinach leaves
  • 1 tablespoon lemon juice
  • 1 clove garlic
  • ½ cup cubed good quality Asiago or Parmesan cheese
  • ¼ teaspoon salt
  • ½ cup olive oil
Instructions
  1. Place all ingredients in a food processor and pulse/blend to combine, scraping down the sides once or twice if necessary.
  2. Taste and season with salt if necessary.
  3. Store in an airtight container in the fridge for up to 2 weeks, or in the freezer for 3 months.
