Greek Style Roasted Potatoes

Lemon, garlic and oregano make these Greek Style Potatoes so savoury and comforting.
  • 3 cloves garlic, minced
  • ⅓ cup lemon juice
  • ½ cup vegetable broth
  • 1 teaspoon dried parsley
  • 1 teaspoon dried oregano
  • ½ teaspoon dried basil
  • ½ teaspoon dried thyme
  • 2 tablespoons olive oil
  • ¼ teaspoon salt
  • generous pinch of pepper
  • 3 yellow potatoes, sliced into ½ inch wedges
  1. Preheat oven to 375 degrees fahrenheit.
  2. Combine all ingredients except potatoes in a small mixing bowl and set aside.
  3. Slice potatoes, place in a glass baking dish and pour the lemon and herb mixture over top, making sure each potato wedge has been coated.
  4. Cover the dish with tin foil and bake for 40 minutes. Remove from oven, toss the potatoes to re-coat, and then turn oven up to 425 degrees fahrenheit. Return to oven uncovered and bake for an additional 25-30 minutes until potatoes are tender on the inside and slightly crisp on the outside.
  5. Serve hot, with any juices and scrapings from the bottom of the pan.
