Prenatal Superfood Bites

Ingredients
  • 2 tablespoons goji berries
  • ¼ cup hemp hearts
  • 2 tablespoons cacao nibs
  • 1 tablespoon bee pollen
  • 2 tablespoons coconut oil
  • 2 tablespoons nut butter of choice (i.e. peanut butter, almond butter, cashew butter…)
  • 4-8 soft pitted Medjool dates*
  • ¼ cup rolled oats
  • ¼ cup finely shredded unsweetened coconut (optional, for rolling)
Instructions
  1. Place all ingredients in a food processor and blend until evenly combined. Roll into 1 inch balls, and then roll into shredded coconut, if using. Set on a baking sheet lined with parchment or wax paper and place in the refrigerater for at least 2 hours to set. Keep refrigerated for up to 2 weeks. You can also freeze them and eat them straight from the freezer!
  2. Note: If it feels too oily to roll into a ball that will stay together, cover and refrigerate for 1 hour before rolling into balls. The coconut oil will set up when cold making it less “oily.”
Notes
*I use 4 dates because I don’t like these to be very sweet. But use more dates if you’d prefer a sweeter treat.
