Cherry Lime Popsicles

Here's a perfect treat for toddlers on a hot day without any need for added sweeteners!
Ingredients
  • 1 cup full fat coconut milk (from a can)
  • 1 cup frozen cherries (measured frozen, then defrost and reserve juices)
  • juice of half a lime
  • optional: raw honey or maple syrup (not necessary for toddlers but if you're making this for yourself, you might want it sweeter!)
Instructions
  1. Defrost cherries (leave out on the counter for an hour or two)
  2. Combine defrosted cherries and all their juices, coconut milk and lime juice in a blender.
  3. Blend until evenly combined.
  4. Taste and adjust: For more tartness, add more lime juice. For more sweetness, add a teaspoon or two of maple syrup or raw honey (don't give honey to kids under 1 year!)
  5. Once you've got it where you want it, pour into popsicle molds and freeze.
  6. Enjoy!
