Easy Grain Free Granola

An easy grain-free granola that's lightly sweetened.
Ingredients
  • 3 cups mixed nuts (I use 1 cup each of almonds, walnuts, and pecans)
  • ½ cup sunflower seeds
  • ¼ cup each: ground flaxseed, chia seeds, hemp seeds
  • ½ cup unsweetened shredded coconut
  • 1 teaspoon cinnamon
  • ¼ cup coconut oil
  • ⅓ cup maple syrup
  • 2 teaspoons vanilla
  • ⅛ teaspoon sea salt
  • ½ cup raisins (optional)
Instructions
  1. Preheat oven to 325 Fahrenheit.
  2. Chop nuts (use a food processor or just give a rough chop with a large knife)
  3. Add nuts, all seeds, shredded coconut and cinnamon to a large mixing bowl and stir to combine.
  4. In a small saucepan, melt the coconut oil and then mix in the maple syrup and vanilla.
  5. Pour the coconut oil mix over the nuts and seeds and stir until evenly coated.
  6. Pour onto a large (or two small) parchment-lined baking sheets and spread out evenly.
  7. Bake for 15 minutes, rotate the pan, and then cook for 10 more minutes until just starting to turn golden. Watch carefully as nuts can burn easily!
  8. Remove from oven and let cool completely. It will crisp up more as it cools.
  9. Break apart, add raisins if using, and store in an airtight container! Large glass mason jars work great.
