A spiced, naturally sweetened, take on traditional rice crispy squares that are perfect for the holidays.
Ingredients
1 cup smooth natural peanut butter (make sure it is well stirred, and not dried out)
½ cup natural honey (creamed or liquid is fine)
¼ cup coconut oil
1 teaspoon vanilla extract
¼ cup Adapt (if not using, then instead add 1 teaspoon of cinnamon, ½ teaspoon each of ground cardamom, ground ginger, and ground nutmeg, + ⅛ teaspoon ground allspice or ground cloves)
⅛ teaspoon fine sea salt (omit if peanut butter is salted)
In a small saucepan, combine everything except the rice cereal and heat gently on low heat, stirring until completely combined.
Place the cereal in a large mixing bowl, then pour the peanut butter mixture over top.
Using a spatula, mix thoroughly for a few minutes until all the cereal is completely coated.
Line a 9 X 11 or 8 X 8 baking dish with parchment paper, then pour the cereal mixture into the pan. Use a spatula to spread it out evenly. Let set in the fridge for at least 3 hours.
Remove from the pan by lifting the whole batch out with the parchment paper edges. Then cut into small squares and enjoy. Store in the fridge for up to 1 week.
