Pear, Pomegranate and Jalapeño Pico de Gallo

Ingredients
  • ½ cup pomegranate seeds
  • 1 small ripe pear, peeled and diced into ¼ inch pieces (about ¾ cup)
  • ½ jalapeno, seeded and finely diced
  • ½ cup English cucumber, diced into small pieces*
  • ½ cup finely chopped cilantro
  • ⅛ teaspoon salt
  • 1 tablespoon lime juice
Instructions
  1. In a medium sized mixing bowl, combine all ingredients and toss gently to mix.
  2. taste and adjust with an additional pinch of salt and/or squeeze of lime juice, to your preference.
  3. Serve with your favourite hearty, whole grain, salted tortilla chips.
Notes
*If using a regular cucumber, peel it first.
