Grown-Up Jalapeño Poppers

Ingredients
  • 6 jalapeños
  • 1 cup cup goat cheese
  • 2 tablespoons + 2 teaspoons honey, divided
  • ½ cup almonds, measured then chopped
  • ⅛ tsp salt, omit if using salted almonds
Instructions
  1. Preheat oven to 450 degrees fahrenheit.
  2. Slice jalapeños in half, lengthwise, and remove all seeds and white ribs with a pairing knife or small spoon.
  3. Cook jalapeños face down for 10 minutes on a parchment lined baking sheet.
  4. Once done, turn oven temperature down to 400 degrees fahrenheit.
  5. Meanwhile, stir the goat cheese and 2 tablespoons of honey together in a small bowl.
  6. In another small bowl, stir together chopped almonds, remaining 2 teaspoons of honey, and ⅛ teaspoon salt until all almonds are lightly coated.
  7. When jalapeños are done, carefully stuff about 2-3 tsp goat cheese mixture into each jalapeño half and top with 1 heaping teaspoon of almond and honey mixture.
  8. Bake for 7 minutes at 400 degrees fahrenheit.
  9. Let cool 3-5 minutes before eating! Serve hot!
Notes
* To prepare these ahead of time. Follow steps 1-7, but let the jalapeños cool completely before stuffing them. Once stuffed and topped with almonds, store in an air tight container in the refrigerator until ready to cook and serve.
