Super Seed Granola (nut free)

Ingredients
  • 1½ cups rolled oats
  • 1½ cups crisped rice cereal, or sub an additional 1½ cups rolled oats
  • ¼ cup ground flaxseed meal
  • ⅔ cup pumpkin seeds
  • ⅔ cup sunflower seeds
  • ¼ cup chia seeds
  • ¼ cup hemp seeds (also called hemp hearts)
  • Pinch of salt
  • 2 teaspoons cinnamon
  • ½ cup maple syrup
  • 1 tablespoon vanilla extract
Instructions
  1. Preheat oven to 325°F. Line a large 12 x 17 baking sheet, or two smaller baking sheets, with parchment paper.
  2. In a medium sized mixing bowl, mix oats, crisped rice cereal, flaxseeds, pumpkin seeds, sunflower seeds, chia seeds, hemp hearts, salt, and cinnamon together.
  3. In a separate small bowl, mix maple syrup and vanilla extract together.
  4. Pour maple syrup mixture over oat mixture and stir to combine until everything is equally coated.
  5. Spread oats onto baking sheet in an even layer. Bake for 25 minutes, then remove from oven and let stand until completely cool. Don't mix while it's cooking or cooling, otherwise it won't be chunky!
  6. Once cooled, gently break apart the granola by hand into small chunks.
  7. Store in an airtight container for up to three weeks.
Notes
